In reply to Cindy Thomas. Hi Cindy. I have not tested this recipe with chicken breasts. I specifically developed this recipe with chicken thighs because they stay so moist during baking, and since the curry needs to be cooked long enough for the rice to become tender, chicken thighs were the best option.
