I tried these for dinner last night, with blue corn chips and a homemade sweet chili sauce (that didn’t impress me – not the one you referenced).  These turned out to be a lot of effort, but not as much return as I would have liked, flavor-wise.  They might have been better with lime juice.  I’ll try that with our next meal of them, since we only used half the pork, mayo and cucumbers.  But I will not be making them again.  In my old age I’m much preferring simpler recipes..

Hahaha, I hear ya. Frying isn’t my favorite, either. Only once in awhile, and when the stove is already due for a deep clean anyway. LOL.
