This Vegetarian Quiche Recipe makes brunch dreams come true!

When my husband asks me for brunch menu ideas to celebrate Mother’s Day, I have lot of opinions, of course.

At the top of my list is lemon pancakes with just some good, classic bacon in the oven (cooked to the softer side of crispy, the way I like it). And a big mug of caramel coffee or a huge bloody with epic bloody mary skewers.

But where’s the eggs? Well, I eat enough scrambled eggs any ol’ day of the week, so I want something fancier for Mother’s Day! And this veggie quiche recipe fits the bill of fancy eggs, but it’s still very easy, which is such a sweet spot.

While the heartbreak of the pandemic has closed several of my favorite restaurants, others luckily remain open. But even some of those that have been able to hang on are still operating with a limited menu due to staffing issues.

Our local Cajun and Creole restaurant is an example of this. They used to have a very delicious Cajun shrimp pasta on the menu, but these days only focus on po’ boy sandwiches.

So, since I’m always looking for ways to add to my library of salmon recipes, I decided to try my hand at Cajun Salmon Pasta at home.

Just like my creamy salmon pasta and pesto salmon, this seafood dish is a breeze to prepare on a weeknight, but will make you feel like you’re enjoying a special restaurant meal!

I’ve been on a mission the past few years to bring you the best recipes that my family and I really love. They might not always be the fanciest or the prettiest (looking at you, crock pot ribs and slow cooker beef stroganoff), but they’re tried and true! And I hope that you’ve been enjoying them.

Often, our weeknight meals are a protein, a carb and veggies, all mixed together. There’s no better way to do that than with a pasta dish.

Salmon pasta (with lots of spinach stirred in), taco mac and cheese, and mushroom and lentil pasta sauce are all weeknight favorites around here, both for the adults and the toddler.

And then there’s this comforting recipe! Whether it’s salmon pesto pasta, or pesto pasta with chicken and veggies like this one, pesto + noodles is just SO simple and so good.

It comes together quickly, but it’s packed with delicious goodies like sun-dried tomatoes, pine nuts, and little balls of mozzarella cheese. I hope you love it as much as we do.

If you’re like me, you’re trying to plan a healthful cottage cheese breakfast, a light shrimp wonton soup for lunch, and work some afternoon exercise into your busy schedule.

But also, not beating yourself up and not expecting perfection. Right? Let’s work on making good choices at dinner, too, but still have fun with it.

Ground turkey has always been a meal planning staple for me, dating back to college. I used to make Asian sloppy joes and cheeseburger pizza using turkey, for myself and my roommates.

Remember how even though I work from home, I still “pack my lunch” for the following day, using fridge salad kits? The options for these kits are really endless, and today I’m drawing inspiration from the most popular pasta salad in all the land.

I used to work at the gourmet prepared foods counter of a local grocery store, and they had this pasta salad made with gemelli pasta (a twisted shape sort of similar to rotini, that I also use for crockpot soup) that people would order by the pound…or more.

Before I worked at this store, I loved that pasta salad, too. But once I became an employee, I got a behind-the-scenes look at how it was made, and learned it involved something called “heavy duty mayonnaise.” Yes, that’s a real thing. Yes, it’s just as horrifying as it sounds.

I don’t know when the mayonnaise industry started using the same terminology as hardware stores, but it scared me enough to inspire me to go home and create a salad kit version free of any heavy-duty ingredients.
