Do you have “clean out the fridge” meals once in awhile, or even weekly?

Pizza is frequently on our menu for that type of meal, because pizza (and even a crostini pizza bar) is great as a vehicle to use up extra odds and ends hanging out in the fridge (like rotisserie chicken for chicken pizza or cheeseburger pizza made with leftover ground beef).

Often, these leftover ingredients are from two or three recipes I’ve made for work, resulting in one big Frankenpizza (which is honestly how the crab rangoon pizza came about).

Celery, grape tomatoes and odds and ends of cheese often need to be used up. And we always have shrimp of some kind in the freezer, because it’s one of my daughter’s favorite foods.

While shrimp is great for an appetizer or a seafood pasta salad, you might not generally think of it for pizza. I’m hoping I can change your mind with this buffalo shrimp pizza recipe.

Loaded Potato Pizza

I may have mentioned this previously, but I keep a “to make for the blog” list of recipe ideas on my phone.

I’m always adding to it based on inspiration I get from restaurants (like a blood orange margarita), magazines (like the chilean sea bass I adapted from Bon Appetit) and the farmer’s market (like a batch of fajitas veggies when bell peppers are in season).

“Loaded Baked Potato Pizza” has been on that list since, I kid you not, 2013. Well, I finally made it a reality, and it was just as delicious as I always hoped it would be!

Now I’m wondering why I waited so long to make this recipe. My favorite thing about this Loaded Baked Potato Pizza recipe is that it can be made entirely with ingredients you already have in your kitchen or are EASY to find at any grocery store (just like my loaded mashed potato casserole).

No hunting around for obscure ingredients required.

One of the things I love about food is the strong memories we often attach to it. Even something as a simple as a turkey burger takes me back to a very specific point in time: just two years ago this summer, when my husband and I were moving from our first home to our second/current/forever home.

Buffalo chicken salad is one of those dishes that I hope never falls out of favor on restaurant menus. With the tangy/spicy chicken, the crunchy vegetables, and the creamy ranch dressing, it’s just a perfect combination of flavors and textures.

It’s not, however, always the smartest nutritional choice. Today, I’ve decided to take this restaurant favorite and give it a little makeover (just like I did with my healthy buffalo chicken dip) with this quick, easy and healthier version – Buffalo Chicken Salad with Ranch Cottage Cheese.

My husband and I go through Greek yogurt at an almost alarming rate. Every single time I hit the grocery store, I’m buying one or two of the largest tubs I can find of our favorite brand. Each time I peel back the foil on a new tub, I think to myself “didn’t I JUST open a new container?” The answer is yes, yes I did.

Next week is already Labor Day weekend? I thought I would have time to savor every drop of this summer, after the worst-ever Polar Vortex we went through last winter. Instead, it seems like summer has gone by even faster than usual.

It’s really not surprising, considering how much I’ve done this summer: kayaking, a big picnic with friends, several baseball games, a trip to Columbus, a charity event at the zoo, a mini vacation with my mom, a mini vacation with my girlfriends, lake time for the 4th of July, the Ann Arbor Art Fair, the annual Ferndale Pub Crawl, my sangria party, a professional soccer game, camping, and the sinus surgery I just had a few days ago (the only not fun part of my summer, that’s for sure).

Whew, I’m tired just typing all of that.
