]]>I’m bringing you an oldie but a goodie today. Kind of like my orange ginger chicken, this is a recipe I’ve been making my family for many years, and I’m not even sure of the “origins” of it.
I think one time I just had a half of a jar of pimentos in the fridge left over after making pimento cheese dip that I wanted to use up, to be honest.
Like my taco mac and cheese, it’s a super creamy stovetop mac and cheese. It has the sharp cheesy flavor of Monterey Jack and white cheddar, and is seasoned with “ranch” herbs like dill and chives.
And then a generous spoonful of pimentos are added for extra flavor. I hope you love this Pimento Mac and Cheese recipe as much as my family does! It’s one of my favorite side dishes for ribs.

]]>Whenever I make anything involving pâte à choux (a light French pastry dough), I think of my Grandma Fox. Of course, Grandma probably never called it that.
We mainly just knew it as “cream puff dough,” because that was her famous dessert. She passed the recipe and technique on to my mom, who now carries on the tradition.
Having watched each of them make cream puffs plenty of times over the years, I was actually in the process of making them myself when Grandma died years ago.
It was beautiful and sad and ironic and not ironic at all to be making one of her favorite desserts when I got the news that she had passed.

]]>The Masters golf tournament is coming up this weekend. I know a lot of people think golf on TV is really boring, and I couldn’t agree more. However, I’ve had some of the best naps of my life during this particular golf tournament!
It’s early April, so it’s usually just about the time of year we open up a few windows to get some fresh air flowing through the house. There’s usually not much else going on this weekend, so Jeff is home watching golf, and I’m on the couch reading magazines until . . . zzzzzzzz.
The sound of the announcers, the birds tweeting, the incredibly boring subject matter. I’m practically dozing off just thinking about it.

]]>My friends like to tease me about the fact that I have a formal, documented list of life goals. I don’t care; I think it’s cool. How else am I supposed to accomplish everything I want to do in life if I don’t keep track?
My #1 biggest goal is that I would like to attend the Kentucky Derby and wear a really big hat. I’m actually holding out on drinking my first-ever mint julep until I’m there.
