We’ve all had bad banquet food. In my experience, it involves a choice of overcooked chicken or bad vegetable lasagna. The lasagna is mushy and overcooked. And unlike it’s meatier cousins like Greek lasagna, it’s usually runny and watery.

One of the few banquets I’ve been to that has had great food? My culinary school graduation, of course. My instructors knew what they were doing when it came to banquets. Not only did they offer up lamb lollipops and the best vegetarian quiche, but they knew that vegetable lasagna can be great if it’s made well.

And it turns out that making it well involves a secret ingredient. An ordinary item you can find at any grocery store, but it has a magical purpose when it comes to veggie lasagna.

When you think of grilling, my guess is you don’t think of elegant, “home chef”-style beautiful food. For most people (myself included), everyday summer grilling usually consists of hot dogs, hamburgers, baby back ribs with the best rib rub on them, or root beer ribs, and maybe some rustic grilled veggies.

I have this weird thing with soups. With some soups, I really only like the broth. Like, I enjoy chili that has a thinner consistency, so that I can eat the broth, and just leave behind all the beans and meat.

But with other soups, it’s really the “stuff” that I’m into. Like minestrone. I love the combination of those short little tubes of pasta (“ditalina”), ground beef, beans, lots of veggies and cheese.

The broth doesn’t matter as much in minestrone, it’s really all about the stuff.

Fun fact about me: when I was a kid, it seemed like I won nearly every contest or drawing I entered. I had the best luck! Random drawings? I won them.

Coloring contests in the newspaper? I rocked those Crayolas. Reading contests? I read the most books. Contests to sell the most boxes of Girl Scout cookies? I went straight to the rich people’s houses in the neighborhood.

I even won “guess how many ____ are in this ___” contests. I distinctly remember the movie theater having a contest to guess how many gum balls or something were in a big jar.

I guessed closest, and thus received an Adult XL size “Honey I Blew Up The Kid” t-shirt. Perfect for a nine-year-old girl, yes?

When I go grocery shopping, I have three goals in mind: 1.) Buy lots of whole, minimally processed foods, 2.) Buy as many made-in-the-U.S. (preferably Michigan!) products as I can, and 3.) Get in and out of there as fast as humanly possible. Let’s be honest – Goal #3 is the one that keeps me sane, but it’s totally possible to also meet Goals #1 and #2 if I know what to look for.
