This Dill Pickle Pasta Salad recipe uses a simple technique to guarantee a perfectly dressed salad every time – never dry or bland! Plenty of zesty pickles and cubes of cheese will make this a hit at your next gathering!

Easy Dill Pickle Pasta Salad

You may remember this technique from my potato salad with bacon, and it works just as well with pasta salads of all kinds as it does with potato salad.

This pickle pasta salad uses a technique I’ve been relying on for years – dividing the dressing in half and adding it at two different stages.

Have you ever stirred together your pasta and dressing, refrigerated your salad, and then wondered why all of your dressing has disappeared? Sometimes it seems so dry after you get it back out of the fridge, right?

With this technique, you toss freshly cooked pasta with half of the dressing, then chill the salad to allow the pasta to absorb all of that flavorful dressing.

Then, once it’s chilled, just before serving, you add the rest of the dressing and toss again.

This technique ensures that the pasta is seasoned by absorbing some of the dressing, but there’s also more dressing for the surface of the pasta. It also won’t be a gloppy mayo-laden mess from accidentally over-dressing. It’s just a perfectly dressed pasta salad.

  • You can make it in advance but it will taste like it’s freshly made, thanks to the two-step dressing technique.
  • It’s a versatile dish that pairs well with a wide variety of main courses.
  • It’s customizable for what you have on hand. Use a different pasta shape or cheese!

These Buttermilk Chicken Tenders are bursting with flavor, thanks to the garlic, mustard, hot sauce and paprika in their marinade. Frying them up is easier than you think!

Buttermilk chicken tenders present an opportunity to add a lot of flavor, but not everybody takes advantage of it.

Instead of simply coating chicken tenders in buttermilk, breading them and frying them, let’s add some more flavor to the buttermilk marinade so that the end result is a chicken tender that is not only golden brown and crispy, but hugely flavorful and savory.

Just like with my buttermilk chicken marinade, the garlic, mustard, hot sauce and paprika in the marinade for these buttermilk fried chicken tenders make them flavorful enough to just eat on their own. Your family will be begging you to make these crispy, flavor-packed tenders every single week!

They can also be served with dipping sauces, or added to a Spring salad or piled onto a sandwich for a larger meal.

  • They have a ton of flavor. The marinade includes garlic, ground mustard, sriracha and paprika to season the chicken.

This smoked salmon pizza is an explosion of flavor in each bite. Crispy naan bread is topped with herbed cream cheese, smoked salmon, capers, onions and everything bagel seasoning. Finish with soft eggs and chili crisp to take it over the top!

Sometimes my recipe inspirations comes from restaurants. Sometimes it’s magazines. And sometimes, there’s nothing else behind it other than I want to put a ton of my favorite ingredients all in one dish.

Like my fried goat cheese salad and shishito pepper recipe before it, this smoked salmon pizza is the last thing. It’s just everything I ever want to eat, put together into one glorious dish.

This pizza or something very similar would probably be included in my last meal on earth. Smoked salmon? Soft eggs? Fresh herbs? Chili crisp? The gang’s all here.

This salmon pizza is a great light meal for a hot day, because it’s meant to be served at room temperature or close to it. This also makes it perfect to cut into small wedges and serve as an appetizer.

Grab a strawberry mule (my drink of choice for my last supper) and let’s get into it!

Think of Sonoran Hot Dogs as an amazing mashup of a hot dog and a taco. Oh, and it’s even a bacon wrapped hot dog! Top with your favorite Mexican-inspired condiments.

Have you ever tried the American-Mexican delight that is the Sonoran hot dog? It’s like a mash-up of a really great hot dog and a really great taco, plus add bacon to the mix.

It sounds crazy, but it just totally works (kind of like how my taco mac and cheese combines two favorites into one).

I first discovered this bacon wrapped hot dog delicacy at a local restaurant and quickly realized how easy and affordable it was to make at home.

You can serve the Sonoran hot dogs with any number of Mexican-inspired condiments and toppings, including refried beans, queso fresco, tomato, avocado, cilantro and sour cream.

So, spice up your summer with this Sonoran hot dog recipe! Serve them with Dr. Pepper baked beans, blistered shishitos, and a beer or a pitcher of cold lemon margaritas.

You could even serve them bar-style, so everybody can assemble their own. The toppings will be really similar to my fajita bar, but you’ll just be using hot dogs and buns instead of tortillas and fajita meats.

These are also great on game day, alongside a football themed charcuterie board and healthy buffalo chicken dip.

Not sure what to do with leftover cornbread? This Cornbread Breakfast Casserole recipe is a hearty egg bake with sausage, cornbread and black beans. It’s easy to make ahead for a brunch gathering.

As a family of three, we almost always have leftovers.

Leftover dinner, leftover baked goods, leftover ingredients. Since almost all recipes everywhere (including a lot of recipes on this blog, even) are written for four to eight servings, we always have an extra helping for that fourth person that isn’t at our table.

And honestly, we love it. We love being a family of three, happily eating our leftovers. It makes lunch the next day (at least for one of us) an autopilot meal, like microwaving the last slice of vegetarian quiche. Sometimes it means we can have mashed potato cakes with our weekend brunch.

With some meals, like a breakfast charcuterie board or cottage cheese breakfast bowls, it’s super easy to just adapt the quantities to what we need.

But with things like baked goods, it gets a little trickier. A batch of cornbread meant for two people won’t quite be enough for the three of us, but with a bigger recipe, we’re left with extra. Or sometimes we have extra after making chorizo stuffing.

Leftover cornbread, just on it’s own, is not my favorite. So today, I’m sharing the leftover cornbread breakfast casserole I’ve created to repurpose it into something new and delicious.

My roasted corn salad recipe is an oldie but a goodie. In fact, not only is it one of the most popular recipes on this blog, but it’s also one of my favorite recipes to take to a party. I’ll sometimes simply call that recipe “elote salad,” and serve it alongside baby back ribs (don’t forget the best rib rub when you make them)!

What is Elote?

Elote is a popular street food in Mexico. It’s simply corn on the cob (usually boiled or grilled), coated with condiments such as mayonnaise, cheese, lime juice and spices.

However, I’ll be the first to admit that the salad can be somewhat polarizing among certain crowds. In my experience, 50% of party guests will LOVE it and come back for seconds.

But the other 50%? There’s somebody who wants to try it, but can’t eat onions. There’s somebody who doesn’t like any spice at all.

There’s a toddler who just wants corn without all the “stuff” on it. And then there’s the people with the cilantro-hating gene.

There’s not a day that goes by where I don’t realize how incredibly fortunate I am. Here I am, buying extra food to use as props in my food photos, while also being very conscious of the fact that 1 in 7 households across the United States don’t know where their next meal is coming from.

I do my part as much as possible by making regular donations to my local food bank and I’m in the process of planning a Little Free Pantry for my neighborhood as well.

So, I have something to confess when it comes to slow cooker recipes.

Even though most people seem to prefer (they even beg me for!) slow cooker recipes where you just dump all the ingredients into the pot, set the timer for eight hours, and then dig in – those are not my favorite.

Yes, they are simple and quick to prepare and don’t require many dishes. It works well for crockpot soups, and if you like that method, you’ll like my Slow Cooker Lentil & Sausage Soup.
