Green Bean Casserole Crockpot Recipe

If you’ve been underwhelmed by classic green bean casserole made with canned soup, I really don’t blame you. It’s not my favorite, either.

So I set out to not only give it a fresh and flavorful upgrade, but also do it in a crockpot, so your casserole doesn’t have to take up valuable oven space on Thanksgiving or Christmas. What can I say, I enjoy a challenge.

I ended up testing this recipe five times to get it just right for you. It uses fresh green beans and fresh mushrooms (no gloppy canned cream of mushroom soup).

It’s the perfect balance of cooked but not mushy, saucy but not too liquidy, and it’s the epitome of comfort food with the convenience of slow cooking.

Why you will love this Green Bean Casserole in Crockpot

  • Gourmet touches like fresh green beans, fresh mushrooms and Parmesan cheese appeal to both comfort food enthusiasts and those seeking something a bit more upscale.
  • Effortless cooking with the convenience of a crock pot, allowing you to set it and forget it for a few hours.
  • Won’t take up valuable oven space on a holiday where oven space is at a premium!

Balsamic Green Beans are a bright and tangy side dish that go well with just about anything. With just a few ingredients, you can make a special addition to a holiday dinner or any weeknight.

Balsamic green beans in a white skillet, with a pink linen wrapped around the handle, and a small bowl of balsamic glaze in the corner.

It’s a pretty unpopular opinion here in the Midwest, but green bean casserole just isn’t my thing. Never has been!

I did develop a crock pot green bean casserole recipe, from scratch, with no canned ingredients. But honestly, that was primarily out of early pandemic boredom, just to see if I could do it.

I usually prefer my green beans to be quite acidic at Thanksgiving, because that way they really balance the other heavy flavors on the plate.

One of my favorite recipes was an oldie from Eating Well magazine (back when it was still in print) – green beans with pickled shallots and mustard seeds.

Sadly, I’ve misplaced my copy of the recipe and I can’t find it anywhere online, so I’m a bit heartbroken. It was similar to these blistered green beans, but also totally different.

To mend my broken heart over my lost recipe, I thought I’d just come up with something new. Earthy, crisp green beans are natural pairing for tart, tangy balsamic glaze. If you like balsamic asparagus and my balsamic steak marinade, you’ll probably love these beans.

This balsamic green bean recipe will add a tangy side dish option to your rich Thanksgiving plate. It’s also one of my very favorite side dishes for ribs.

And it’s the perfect side dish for things like honey mustard pork chops, lamb bolognese and salmon pasta.

Do you ever feel like Thanksgiving is basically just carbs on top of carbs on top of meat? I mean, don’t get me wrong . . . I think that’s kind of what we love about this meal so much.

On no other day of the year will you find me eating meat with a side of potato, a different kind of potato, bread and even more bread.

But my taste buds need and crave some fresh veggies and fruits to break up all of the carb-riffic action.

DIY Spring Salad Board - Assemble a bounty of spring produce on a platter, along with creamy Parmesan-Peppercorn Dressing, tangy Parmesan Vinaigrette, and crunchy Parmesan Fricos, and let your guests assemble their own salad with this fun party idea! | foxeslovelemons.com

I’ve mentioned quite frequently that one of my favorite ways to entertain (or heck, even prepare a dinner for just two people) is with DIY platters.

Pile a bunch of great ingredients onto a cutting board, platter, or even just a baking sheet, and let everybody make their own personalized dish.

But the truth is, I love photographing these platters just as much (if not more) than eating them. There’s just something about a platter bursting with colorful ingredients that my camera and I can’t get enough of.

Plus, the food stylist part of me loves screaming “more! more! put more things on that platter!”

Minestrone Pasta Sauté with Ricotta - All the good stuff from minestrone soup, served up in a skillet meal. Top with ricotta and parmesan cheese! | foxeslovelemons.com

I have this weird thing with soups. With some soups, I really only like the broth. Like, I enjoy chili that has a thinner consistency, so that I can eat the broth, and just leave behind all the beans and meat.

But with other soups, it’s really the “stuff” that I’m into. Like minestrone. I love the combination of those short little tubes of pasta (“ditalina”), ground beef, beans, lots of veggies and cheese.

The broth doesn’t matter as much in minestrone, it’s really all about the stuff.

Mexican Pasta Bake - Baked penne loaded with chorizo sausage, black beans, veggies and cheese! | foxeslovelemons.com

I have a food blogger friend who posted a great recipe in the middle of last year’s brutal winter. She ended up getting a snarky comment about her use of frozen vegetables in the recipe.

Well, this other blogger and I live in roughly the same part of the country, so we know what sort fresh produce is available to us in the winter months (thus, we both laughed off this comment).

I mean, last weekend, I went to the farmer’s market. Granted, I got there a little late in the morning, but every single farmer’s table was selling carrots. JUST carrots.

That’s all that was available, and it’s only the beginning of November!

Three Bean Salad with Yogurt-Buttermilk Dressing - A protein packed salad that can be kept in the fridge for lunches throughout the week! | foxeslovelemons.com

September in Michigan always gives me crazy mixed emotions. 80% of my soul wants to put on a cozy sweater, cook a million pumpkin-filled things and guzzle apple cider like there’s no tomorrow.

The other 20% is like “wait, it’s 80 degrees today, the humidity is out of control, and I almost sweat to death trying to sleep with the windows open (and #oneflops pressed against me) last night.”

Whomp whomp whomp. Back to life . . . back to reality. Cold salads rather than hot soups are still the name of the game for at least another few weeks.

Spicy Pork & Mustard Green Soup from Bon Appetit January 2014 | foxeslovelemons.com

In this monthly series, I commit to cooking whatever is on the cover of Bon Appetit, Saveur or maybe some other food magazine. There’s a reason these particular dishes are on the cover – they’re usually the best recipes in the magazine.

Well, it’s time to Cook The Cover again. As expected, the January issues of all of the food mags focused on healthy eating, and Bon Appetit had the most appetizing (pun intended) recipe on the cover.

I’m a sucker for a good Asian soup, especially if it includes noodles. Especially if it claims to be spicy.
