The BEST Veggie Lasagna Recipe

We’ve all had bad banquet food. In my experience, it involves a choice of overcooked chicken or bad vegetable lasagna. The lasagna is mushy and overcooked. And unlike it’s meatier cousins like Greek lasagna, it’s usually runny and watery.

One of the few banquets I’ve been to that has had great food? My culinary school graduation, of course. My instructors knew what they were doing when it came to banquets. Not only did they offer up lamb lollipops and the best vegetarian quiche, but they knew that vegetable lasagna can be great if it’s made well.

And it turns out that making it well involves a secret ingredient. An ordinary item you can find at any grocery store, but it has a magical purpose when it comes to veggie lasagna.

Almond crusted chicken with couscous and grapefruit and arugula salad is equal parts winter comfort food and light, fresh and healthy.

If you’re anything like me, you might have a hard time wanting to eat anything other than comfort food during the winter.

I mean, when I trek outside in five degree windchill to do errands, then come home, I don’t generally want a big salad for dinner.

I want creamy salmon pasta or lamb bolognese. Or a big plate of nachos. Or my mom’s slow cooker beef vegetable soup.

But I believe that there can be a balance between something really comforting and something super fresh and healthy.

This almond crusted chicken with couscous, grapefruit and arugula is one of my favorite winter meals. And just like my chicken sloppy joes and Instant Pot sweet and sour chicken, it’s a healthy meal masquerading as comfort food.

When it comes to clean-out-the-fridge meals, usually, that’s my husband’s territory. His calling in life is opening up the fridge and all the cabinets, finding a handful of the most random odds and ends, and turning it into a meal so terrific that nobody would know he didn’t plan it.

Me? I usually like to have a solid meal plan for the week, with my dinner ideas all mapped out in advance. But sometimes, like when you really ARE trying to clean out the fridge before a vacation, you gotta do what you gotta do. These Summer Salmon Bowls were my very own clean-out-the-fridge creation, and the results were delicious.

I’m definitely a believer that the simplest summer dinners are the best ones. I ate my first artichoke recently. Well, it wasn’t my first time eating artichokes, really. But it was my first time eating a whole artichoke.
I was in California for a wedding, and my mother-in-law and I were killing some time one afternoon. We stopped at a place in downtown Huntington Beach for a light lunch.
On a whim, I decided we should order the whole grilled artichoke, as I’d never had the experience of eating a whole artichoke. I’d always heard it was a fun/tasty experience, but had never tried it for myself. The whole use-your-teeth-to-scrape-the-leaves bit.

After I made this Pumpkin & Kale Lasagna, I discovered that it is nearly impossible to take a glamour shot of lasagna (although I am proud of the photos of my lasagna with cottage cheese recipe). No matter, I wrapped that bad boy up and toted it on across the street to share a meal with my neighbor Anna.
And by “toted it,” I mean grunted and moaned as I carried a 20-pound pumpkin & kale lasagna 50 yards. Then kicked her front door with my foot until Anna let me in. But no matter, she was excited to see me.

This blog series is called “If I Liked It, Then I Should Have Put A [3] Ring [Binder] On It.” I know, naming blog posts after a 5-year-old Beyonce song makes me a huge loser, but until somebody tells me to cut it out, I’m just going to go with it. The title just means that I try out a lot of recipes from magazines and websites – only the ones I really, really like go into a 3-ring binder to keep for the future and make again.

Background: Look, I admit that Giada can be a bit annoying. That random Italian accent that comes out only when it wants to. The twiggy body that is evidence she doesn’t eat much of the food she cooks for her television shows. But you know what? Most of her recipes are really great. I even have one of her cookbooks. I saw her cook these stuffed peppers one Sunday morning, and I immediately went to the grocery store to get all of the fixings so I could make it for dinner that night. I’ve made it countless times since then, and passed the recipe on to my parents, who also love it.
