This Elote Corn Salad is so flavorful!

Right up there with salmon pasta, this salad is one of the most popular recipes on this site!

I think it’s because it’s a side dish that can be made in advance and has a huge amount of flavor going on.

There’s creamy cheese and mayo, tangy lime juice, herby cilantro and a little bit of heat from cayenne and chili powder.

It can be made with fresh or frozen corn, and there’s substitution options for a lot of the ingredients, making it easy to use what you already have on hand.

My favorite part is that it can be served warmed, chilled or even right at room temperature. It’s equally delicious all three ways.

This Fajita Bar is the most delicious build-it-yourself dinner that everybody from the pickiest kids to the hungriest adults will love.

A large round wooden platter filled with fajita bar ingredients like tortillas, cooked chicken and steak, dips, cheese, rice, beans and lime.

We’re firmly in the “I do it myself!” stage of toddlerhood. Including at the dinner table, where my daughter insists on serving herself.

This is great, because this is how little humans learn table manners! So I definitely want to encourage it as much as I can. One of the best ways I’ve found to do this is by serving platter meals.

Things like a breakfast charcuterie board (my daughter LOVES prosciutto so so much) and an elote bar aren’t just fun for toddlers. They’re truly a great way to eat for all ages.

One of my favorite dinners lately is one of my unique food board ideas – a fajita bar. Whether you have multiple proteins and allllll the fajita toppings, or choose just a few that you love best, it’s a great way for everybody to customize their plate.

Instead of filling up your counter space, you can create a large board of all your favorite fajita staples and place it in the center of the table, and have everyone gather around.

Your taco Tuesday and fiestas will be forever changed after creating this fajita platter. It’s perfect for a weeknight, or a game watching party (maybe with a football charcuterie board or a crostini pizza bar too!).

My roasted corn salad recipe is an oldie but a goodie. In fact, not only is it one of the most popular recipes on this blog, but it’s also one of my favorite recipes to take to a party. I’ll sometimes simply call that recipe “elote salad,” and serve it alongside baby back ribs (don’t forget the best rib rub when you make them)!

What is Elote?

Elote is a popular street food in Mexico. It’s simply corn on the cob (usually boiled or grilled), coated with condiments such as mayonnaise, cheese, lime juice and spices.

However, I’ll be the first to admit that the salad can be somewhat polarizing among certain crowds. In my experience, 50% of party guests will LOVE it and come back for seconds.

But the other 50%? There’s somebody who wants to try it, but can’t eat onions. There’s somebody who doesn’t like any spice at all.

There’s a toddler who just wants corn without all the “stuff” on it. And then there’s the people with the cilantro-hating gene.

Happy National Bratwurst Day (aka Bratsgiving)! Grilled brats are a go-to easy dinner for my husband and I all summer long. Pair with a few easy (sometimes store-bought, because real life) side dishes, and dinner is on the table really quick. But today I just went ahead and piled the side dish (roasted corn salad) right on top of the brats.

Let’s talk about funk, as it pertains to food. In particular, all manner of fermented and pickled things, and anything that packs an umami punch. Umami is a fifth basic taste – alongside sweet, sour, salty, and bitter. The Japanese word translates to “savoriness,” and it’s sometimes described as “meaty” or “earthy,”  but I most closely associate it with “funky.” Umami is naturally present in things like beef, pork, tomatoes, mushrooms, Parmesan cheese, miso, kimchi, soy sauce and edible seaweed.

Sometimes, when my husband and I are out to dinner, I look around, and can easily spot the couples in the restaurant that are on a first date. You know, the awkward small talk, cautious flirting, and most especially, eschewing of any super messy menu items.

At one of our favorite places in town, one of the best menu items is elote – roasted corn salad that is slathered in butter/mayo/sour cream and then covered in crumbly cheese.

You know, the kind of dish that is absolutely delicious, but gets all over your face, hands and even arms as you eat it. Not first date fare, but hey – I’ve been married eight years next month. I have no qualms about ordering the elote and digging in!
