]]>If you ask me to name a dish that is super easy for any home cook to make on a weeknight, but kind of feels like a restaurant meal on date night, it would be either creamy salmon pasta or baked pesto salmon.
I know that noodles of all kinds are a workweek staple for most households, including around here, where some variety of veggie pesto pasta with chicken seems to be on our menu weekly.
But sometimes, using salmon instead of chicken makes it seem fancy, even for a weeknight (my instant pot salmon and apricot glazed salmon are also great weeknight salmon meals).
Pairing salmon with noodles in this salmon pesto pasta allows you to add some protein to your carbs, in a way that’s a little bit different and leaner than the traditional ground beef with red sauce combination.

]]>Once I have an open jar of something or the other in the fridge, I pride myself on using it up. I hate food waste! So an open tub of gochujang is an invitation to make Korean meatballs as often as possible.
Recently, it was an open jar of capers. I don’t even know why I originally bought them, I just knew I needed to use them up.
So, I made lemon butter shrimp pasta and creamy salmon pasta, too. But there were still more. Apparently I bought the largest jar of capers to ever exist.
Now, if you Google “how to use up a bunch of capers,” I’m guessing a lot of piccata recipes come up. Piccata sauce is a delicious combination of fresh lemon juice, butter and lots of capers.
Piccata is usually made with chicken or veal, but you know that I’m always making new salmon recipes. Like my pineapple salmon, this salmon piccata recipe is truly a restaurant-quality dish that is actually pretty easy to execute at home.

]]>The irony of being a food blogger who makes a VERY small real-life Thanksgiving dinner has always amused me.
But for the holiday, I’m usually cooking for just four adults and one kid. It makes Thanksgiving dinner a very low-stress meal to host, because cooking for five doesn’t require shuffling dozens of pans and casserole dishes into the oven (or multiple ovens, which we don’t have!).
On the the other hand, it also makes it impractical to prepare a HUGE feast – there’d just be way too many leftovers to deal with (even after making my leftover mashed potatoes recipe and cranberry sauce muffins the next day), and food waste bums me out.
So, in real life, I stick to just the basics, which is usually a small Cajun turkey or turkey with maple bourbon glaze, mashed potatoes with homemade gravy, cranberry sauce, my husband’s grandma’s old fashioned dressing, and green beans or maple glazed Brussels sprouts.
But this blog is where I kind of live out my Thanksgiving FEAST fantasies (and test and eat them in the weeks BEFORE the holiday).
In my dreams, I envision a table loaded with a dozen side dishes, like Thanksgiving salad and roasted acorn squash slices and every other vegetable imaginable. Oh, and Thanksgiving Rice! Let’s talk about this Thanksgiving Rice recipe.

]]>If there’s one thing in my kitchen that I kind of, sort of regret buying, it’s my very expensive, very fancy blender.
To be fair, I didn’t really buy it out of pocket, but used Williams-Sonoma gift cards that I had received for many birthdays and Christmases to purchase it. But still, it was a big purchase, and I’m not sure I use it enough for it to have been worth it.
Aside from the occasional lemon smoothie or blended lemon margarita, my fancy blender sadly doesn’t get a lot of love most of the year.
With one exception. Every fall, without fail, I make some sort of blended squash soup. While I like butternut squash noodles, roasted acorn squash slices for my famous Thanksgiving salad, and roasted delicata squash, for soup, I love sweet dumpling squash.
