As I mentioned last week when I shared my colcannon soup, I’m trying to build up the St. Patrick’s Day recipe selection on this website a little bit more.

While I can make a whole meal out of mini shepherds pies and Baileys brownies, I wanted to share something that will be perfect for leftover corned beef you might have after St. Patrick’s Day. You can also buy some corned beef from a deli specifically to make these for the holiday itself (or anytime), though!

And, as I’ll explain below, these corned beef egg rolls are also a uniquely Detroit creation. But no matter where you hail from, I think you’ll find them fun to make and decadently delicious.

When you’ve been blogging for as long as I have (10 years, if you remember from my lemon curd cake post!), it’s easy to think you have just about every recipe possible in your archive.

But one thing that I very much come up short on is Irish-inspired recipes for St. Patrick’s Day, other than my mini shepherds pies and Baileys brownies.

But watching The Banshees of Inisherin apparently has me inspired, so I have a few new ones planned for this year, including corned beef egg rolls, and this Colcannon Soup recipe.

This soup is inspired by a traditional Irish dish that I was lucky enough to taste while working as a food stylist years ago. The combination of potatoes and cabbage may seem a little boring, but I can promise you that the flavor of the finished cabbage potato soup is anything but!

It’s not unusual for us to have tacos twice a week. On Saturday, we’ll make the classic ground beef/cheddar/lettuce/tomato ones that I grew up eating every weekend.

But we have absolutely nothing against another taco night a few days later – maybe mushroom tacos for Meatless Monday or something different for Taco Tuesday.

What if that something different was ground lamb? It’s the star ingredient in my Greek layer dip and Greek lasagna, and also works quite well for tacos, too.

These spiced lamb tacos come together quickly using everyday ingredients like cumin and chili powder. They might convince you to have tacos multiple times a week, too!

Do you have any strong opinions about coleslaw? I feel like most people do!

Some people like it creamy, others like it vinegary. I’m sure some people will only use green cabbage, whereas others might throw in some red cabbage (or even make a brussels sprout coleslaw).

Honestly, I pretty much like all coleslaw (and it’s one of my favorite side dishes for ribs, so especially next to a rack of crock pot ribs or root beer ribs), but I like it best when it’s not too creamy and not too vinegary. In my opinion, the best coleslaw dressing recipe is a nice balance between creamy and vinegary.

Sometimes I like my coleslaw with a touch of sweetness to balance out something else on my plate that might be spicy (like my spicy apricot glazed salmon).

This coleslaw with celery seed with an easy coleslaw dressing recipe is my idea of a perfect slaw recipe.

My husband and I have a profound disagreement when it comes to how sloppy joes should be eaten.

You see, he insists on eating them with a fork and knife. Forks and knives are all well and good for say, almond crusted chicken or orange glazed chicken.

But I say that the very essence of a sloppy joe sandwich is, well, sloppy, and thus should be required to be eaten as a sandwich in all of its messy glory. Just like I’m using my hands to eat a prosciutto sandwich and wonton nachos, I’m picking up a sloppy joes, too.

Sad update on the Chinese food takeout situation in my neighborhood: The owner of our favorite place did indeed pass away, and we all miss her terribly.

China Ruby is now closed for good, and we haven’t been able to find any takeout place that holds a candle to it. Sure, there are places a 20 – 30 minute drive away that are supposed to be great, but who wants to drive that far for takeout?

When it comes to ordering Thai takeout for dinner, we have two options in our town: the place with the really good fresh rolls but the “just ok” entrees, or the place with the really good entrees but not-quite-as-good fresh rolls. For me, Thai takeout is ALL ABOUT those fresh rolls.

I’m completely willing to sacrifice my entree in order to get the best fresh rolls. Jeff is the opposite, so we have to alternate back and forth when we order.

Now, despite how it sounds, we don’t really order carryout that often. Most nights, you can find us cooking at home like the “home chefs” that we are.

So, this holiday season,  why not try my hand at fresh rolls for a party appetizer? Maybe I could end up making a better version than either carryout place! (more…)

So, I have something to confess when it comes to slow cooker recipes.

Even though most people seem to prefer (they even beg me for!) slow cooker recipes where you just dump all the ingredients into the pot, set the timer for eight hours, and then dig in – those are not my favorite.

Yes, they are simple and quick to prepare and don’t require many dishes. It works well for crockpot soups, and if you like that method, you’ll like my Slow Cooker Lentil & Sausage Soup.

The April issue of Bon Appetit had a huge, crunchy fried chicken sandwich on the cover. Now, I’m not normally a fan of fried chicken. In fact, I went through a weird phase where I just wouldn’t eat it. Under any circumstance.

For awhile, when my family took our annual trip to Zehnder’s restaurant in Frankenmuth, MI (primarily famous for their fried chicken dinners), I would eschew the plate of fried chicken and order the roasted variety. Everybody thought I was crazy, and maybe I was.
