Beer Brats with Beer Queso

I seriously cannot believe August is already here. I feel like I’ve spent my entire summer house hunting, getting ready to move, moving, getting our old house ready to sell, and selling. Now that we are f-i-n-a-l-l-y offically moved in and unpacked, I’m planning to spend the month of August savoring all of the fun summer things I haven’t done enough of yet this year. Bike rides. Dog walks. A picnic. And of course, lots of grilling out and spending time on our new patio.
Bratsgiving Day is August 16th – a day to whip up some delicious grilled brat recipes for your friends! I really recommend Johnsonville® Beer n’ Bratwurst for your celebration. They are a delicious combination of the classic flavor of Johnsonville® sausage and the rich taste of beer. To add even more beer flavor, I whipped up quick beer queso using sharp cheddar cheese and a local brew. I topped them with thinly sliced fresh jalapeno (homemade pickled jalapeno peppers or fajitas veggies would be great toppings here, too) And naturally, I served these brats with . . . beer!

Beer Brats with Beer Queso
Ingredients
- 1 package Johnsonville® Beer n' Bratwurst
- 1/4 cup lager-style beer
- 1 teaspoon cornstarch
- 1 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- Pinch of cayenne pepper
- 1 cup evaporated milk
- 4 ounces shredded sharp cheddar cheese
- 5 soft pretzel sausage buns
- 1 jalapeno pepper, thinly sliced (optional)
Instructions
- Grill bratwurst according to package directions.
- Meanwhile, in small bowl, whisk together beer, cornstarch, salt, garlic powder and cayenne. In medium saucepot, heat milk over medium-high heat until just before boiling. Reduce heat to medium-low and add cheese and beer mixture; whisk vigorously until smooth.
- To serve, place bratwurst in buns and top with queso and sliced jalapenos, if desired.
Just came across this recipe and can’t wait to try the Beer Queso.
One thing we always do to take our brats to the next level is to put them in a beer bath before grilling. We use a disposable tinfoil pan, put some onion slices on the bottom, put the brats on top of that then put enough beer in the pan to cover the brats just past half way. I like to add a few grinds of red pepper flakes to give it a bit of heat but you can skip that. We cook this on a low fire on the grill and turn the brats over every 20-30 minutes so they are cooked through. You don’t want to boil these, just a simmer. When you are ready to cook them turn up the flame, remove from the beer bath and grill until they are nicely browned. You’ll be surprised at how much extra flavor the beer & onion bath gives the brats. And if you don’t like onion just do a plain beer bath, it still gives tons of flavor.

Tried this recipe, way too much salt and the queso didn’t thicken even when I added more corn startch and cheese.

There are few things that I love separately more than sausages and beer cheese. The best thing about this recipe is that it combines these two loves. I am alos so very proud of you for using a Michigan microbrew like Bells Lager of the Lakes. This recipe was delicious – I would put the beer cheese sauce on literally anything and everything while the jalapenos gave a pleasant hit of spice.
Well, there’s still more cheese sauce in the fridge. So go ahead and put it on anything and everything 🙂
