Peanut Butter & Granola Grilled Banana Boats
Apparently, when I was a baby, I ate A LOT of bananas. Like pureed bananas and then sliced bananas. Bananas all the time. I didn’t know this until my mom told me about it much later in life, but I did wonder why I had an unexplained aversion to bananas for a long time.
To this day, I’m still kind of iffy on them. I like them in baked goods and smoothies and desserts like chocolate covered bananas, but still don’t really prefer to eat them on their own, even if they are the ultimate portable snack. Maybe someday I’ll work myself up to it.
Along the lines of my Grilled Fruit Kabobs with Cannoli Dip last week, I’m celebrating the last few days of summer with grilled desserts. When wrapped in foil and grilled, bananas’ natural sweetness is taken to the next level.
For these Peanut Butter & Granola Grilled Banana Boats, I’ve split the bananas and filled them with peanut butter baking chips and chocolate granola (any type of granola will work). After just 5 minutes on the grill, this dessert is good-to-go, no plate needed!
Peanut Butter & Granola Grilled Banana Boats
Ingredients
- 1 large unpeeled banana
- 1-1/2 tablespoons granola
- 1-1/2 tablespoons peanut butter chips
Instructions
1. Preheat outdoor grill for direct grilling over medium heat. Place banana on 12-inch square of foil.
2. Make 1/2-inch-deep slit in banana lengthwise, leaving 1-inch uncut at both ends. Use fingers to gently pull banana open. Fill banana with granola and peanut butter chips; wrap foil around banana, keeping banana upright if possible.
3. Transfer banana to grill and cook 5 minutes or until peanut butter chips are melted. Unwrap and serve immediately.
How fun are these!? LOL, how funny that you OD’d on bananas as a kid. I love them! And stuffing them with granola and PB sound awesome!
